In the Kitchen: Lemon Drizzle Cake

It has been quite some time since I posted a recipe but a few weeks back I promised you the recipe for the lemon drizzle cake I made for the Purple Fairy's Birthday. So I am posting it now as part of the #RE2014 review month post catch-up. It was so yummy that we scoffed it all before I could take a photo so the one above is a stock photo that is pretty similar to mine.

Ingredients:
440g Self-raising flour
260g Sugar
8 Eggs
440g Butter
200ml Lemon juice

For drizzle:
Lemon juice
Icing sugar

Method:
Preheat the oven to 140 degrees centigrade
In a mixing bowl cream together the butter and sugar until smooth
Add eggs and mix in thoroughly
Add flour and mix until smooth
Add lemon juice and mix through cake mixture. Ensure that you get the cake in the oven as soon as the lemon juice is mixed through as the juice will activate the bicarbonate of soda in the flour.
Place mixture into a large greased cake tin or silicon mold.
Bake for 45 mins or until baked through.
To make the drizzle simply mix lemon juice and icing sugar together until it is the consistency you require and pour over the cake once it has cooled.
