The hubby and I had a craving for something sweet to go with our tea last night so I whiped up a batch of rock cakes. They may not look the pretiest things in the world but there super easy and fast to make. The recipe I followed was from of one of hubbies mountains of cookbooks. Its called Field Guide to Cookies by Anita Chu.
Ingredients:
1 1/3 cup flour
2 tsp baking powder
3/4 cup sugar
1 egg
1/3 cup unsalted butter
3 tbsp milk
1/2 cup currants
Method:
Preheat oven to 350F or 180C
In a medium bowl sift flour, baking powder and sugar and set aside. In a small bowl beat egg until frothy.
Using a rubber spatula, fold the butter into the flour until roughly incorporated. Add egg and milk, mix well until everything has been rough incorporated. Ad currants and continue to mix until a dough of medium stiffness has formed.
Using a fork scrape enough dough to make craggy balls the size of a heaping tablespoon. Place 2 ½ inches apart on a cookie sheet. Bake for 10-15 minutes or until golden and beginning to colour at the edges, rotating halfway through. Remove from oven cool slightly on wire racks before serving hot.
