Emma aime in the Kitchen: Goulash Soup

As promised earlier in the week here is my Goulash Soup recipe. Its a hearty winter warmer for those chilly days.

Ingredients:
2 tsp canola oil
2 large onions, sliced
2 garlic cloves, finely chopped
500 g lean chuck steak, trimmed of all excess fat and cut into 2 cm cubes
2 large carrots, grated
2 green capsicum, chopped
2 tbsp paprika
1 can chopped tomatoes (about 400 g)
2 tbsp tomato paste
3 cups (750 ml) salt-reduced beef stock
salt and pepper

Method:
Add the oil to a large pan and heat
Add the beef to brown, when brown remove from pan
Add the onions, garlic, carrots and paprika cook until golden
Add the capsicum and cook off
Return the beef to the pan
Add the stock, tomatoes and tomato paste and leave to simmer
Season to taste
In my opinion the longer you simmer this the better it tastes

  1. That looks and sounds delish. I'm a massive fan of soups in winter, and I've never tried a goulash, so I'll make it next week!

  2. Let me know how it goes Ruby. Its nice served with dumplings, noodles or you can add potato to the recipe to make it a bit more of a full meal.
